Solar Roast is a Pueblo Icon themselves! Mike and David Harktop are the inventors of the world’s only commercial solar-powered coffee roaster. Their fresh roasted coffee beans are 100% USDA ORGANIC.

One of the reason’s the Harktop’s chose Pueblo, Colorado as their business location is for the amount of excellent solar exposure we receive. They are now proud Puebloans who are happy to showcase local flavors within their menu.

Their Certified Pueblo Chile options include a Pueblo Chile Mocha, Pueblo Chile Lemonade and a Bacon Breakfast Burrito with Chopped Pueblo Chilies.

From the artsy local atmosphere and welcoming friendly staff, this is the place to be if you want to experience the Flavor of Pueblo.
