In the heart of Historic Downtown Pueblo is BISTORO, a European bistro serving hearty European comfort foods, great wines & cocktails.
At first arrival the staff was so friendly and excited to present their Certified Pueblo Chile creations. As the Chef prepared the dishes to order, staff came and explained the best cocktail or wine pairing for Pueblo Chile.
As recommended, we chose a bold, dry Shiraz red glass of wine to pair with the Spicy Pueblo Chile.
First Up, Tapas!
Pueblo Chile Stuffed Baby Bell Peppers:
(Baby bell peppers stuffed with Pueblo Chile cream cheese and drizzled with balsamic glaze) The spice from the Pueblo Chile paired with the sweet balsamic glaze and crunchy bell pepper was a match made in heaven!
Next-
Pintxos
(Loaded Crostinis topped with seasoned chopped Pueblo Chile and Parmesan) The play on textures with the dish was so simple and delicious. WE could order these all night!
Ending with the Entree-
Chef brought out the Bocatas: Bistek (Steak, Pueblo Chile, Sauteed onion and aioli) This may have been the star of the show. Our plate was piled high with perfectly seared steak that was seasoned to perfection and topped with local Pueblo Chile.
